Easter Race Car Treats!

Ingredients:

  • 8 pretzel twists
  • 4 squares of almond bark
  • Easter sprinkles
  • 8 Twinkies
  • 16 mini oreos
  • 1.5 c. powdered sugar
  • 1 egg white
  • 1 tbsp. water
  • 8 bunny Peeps

First, make your pretzels. Place the almond bark squares in a microwave-safe bowl. Melt in the microwave, according to package directions, stirring frequently. Once melted and smooth, dip pretzels in the almond bark until fully coated, then coat both sides with Easter sprinkles. Lay to dry on wax paper.

Once the pretzels are dry, prepare your “cars.”

Cut a “seat” out of the middle of each Twinkie. Do not cut all the way through or your car will be cut in half. I eyeballed mine, but I’m guessing it’s about a 1″ x 1″ square, with somewhere between a quarter and half-inch depth.

Twist apart your mini Oreos and remove all the cream. (You can eat or throw away the cream.) The chocolate wafers are going to be your “wheels.”

To make icing, mix powdered sugar, water, and egg white in a small bowl until smooth. One by one, spread a bit of the icing on the inside of a chocolate wafer, then press on to the Twinkies similar to the wheel placement on a car. (See picture above.) The icing is sufficient to attach the Oreos to the Twinkies.

Once all your wheels are attached, insert an adorable Peep bunny into the “seat” of each of your “cars.”

Turn the pretzels upside down and place in the seat with your bunnies, as they are the “steering wheels” for your cars. Again, the picture can be used as reference, if necessary.

One helpful hint: I would assemble these on the platter from which you will serve them, as the Twinkies will stick to the surface of whatever you make your treats on. I was going to assemble on a plate and then transfer to the platter, but the Twinkies had other ideas.
