Quick & Easy Pea Salad

Ingredients:

  • 1 15 oz. can of peas, drained, reserving 3 Tbsp. of juice
  • 1/4 c. shredded cheddar cheese
  • 3 hard-boiled eggs, chopped
  • 3 Tbsp. mayonnaise
  • 1 tsp. sugar
  • 1 tsp. mustard

In a small bowl, whisk together the mayonnaise, sugar, mustard, and pea juice. In a medium-sized bowl, combine the peas, cheese, and eggs. Pour dressing over pea mixture. Thoroughly combine and refrigerate. Serve chilled.
