Crockpot Rotini & Veggies

Ingredients:

  • 1 lb. ground sausage
  • 1 onion, chopped
  • 2 carrots, sliced
  • 4 cloves garlic, minced
  • 2 14.5 oz. cans diced tomatoes, undrained
  • 1 15 oz. can tomato sauce
  • 2 4 oz. cans sliced mushrooms
  • 1 tsp. Italian seasoning
  • 1/2 tsp. dried basil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 3 1/2 c. water
  • 16 oz. rotini
  • 2 c. mozzarella cheese

In a large skillet over medium heat, cook sausage, onions, and carrots until sausage is browned and onions are translucent (about seven minutes). Add garlic and continue cooking for another 30 seconds. Remove from heat and set aside.

In crockpot, combine diced tomatoes, tomato sauce, mushrooms, Italian seasoning, basil, salt, and pepper. Stir in water. Then add sausage mixture. Combine thoroughly.

Cover and cook on high for 4 hours or low for 8 hours.

Add pasta, stir well and continue to cook until pasta is soft (about 10-15 minutes). Add cheese and stir. Serve warm.
