Gooey Cinnamon Breakfast Cake

Ingredients:

Topping:

  • 1 c. packed brown sugar
  • 1/4 c. butter, softened
  • 1/2 tsp. cinnamon

Cake:

  • 2 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 1/2 c. sugar
  • 2 Tbsp. butter, softened
  • 1 egg, beaten
  • 1 c. milk

Preheat oven to 425. Grease an 8″ x 8″ square baking pan.

To make topping, use fingers to mix butter and brown sugar just until crumbly. Mix in the cinnamon and set aside.

To make cake, mix flour, baking powder and salt together. Set aside.

In a separate bowl, cream together butter and sugar. Mix in beaten egg. Then alternate adding flour mixture and milk until all mixed.

Pour into greased pan. Sprinkle topping over batter.

Bake for 30-40 minutes.
