Grandma’s Sausage Gravy & Biscuits

Ingredients for Biscuits:

  • 3 c. flour
  • 3 Tbsp. sugar
  • 1/2 tsp. salt
  • 4 tsp. baking powder
  • 1/2 tsp. cream of tartar
  • 3/4 c. butter
  • 1 egg
  • 1 c. milk

Ingredients for Gravy:

  • 1 lb. ground sausage
  • 1/4 c. flour
  • 2 1/2 c. milk
  • salt and pepper, to taste

First, make your biscuits.

Cut the butter into small pieces and place in freezer until needed.

Preheat oven to 450* F. Grease baking sheet.

Combine dry ingredients. Remove your butter from the freezer and blend into dry ingredients using a pastry blender. Continue blending the butter until you see small, pea-sized pieces of butter throughout the mixture.

Add milk and egg. Mix just until combined. DO NOT OVERMIX.

Sprinkle a flat surface with flour and turn dough out. Knead about 15-20 times. Use flour to manage stickiness, if necessary.

Roll the dough out to about a 1″ thickness. Cut biscuits using a biscuit cutter. (In a pinch, you can also use a glass.)

Place biscuits on a baking sheet and bake for 10-15 minutes. Biscuits should be golden brown.

While your biscuits are baking, make the gravy.

Start by browning the sausage. When the sausage is browned, add in the flour and mix well. Gradually add in the milk, continuing to stir.

Once the milk is added, continue cooking and stirring until the mixture boils and thickens. Reduce heat and cook an additional two minutes, stirring constantly. Season with salt and pepper.

When the biscuits are finished baking, remove from oven and serve immediately. Cut open a biscuit and place on a plate, cut side up. Top with hot gravy.
