St. Patrick’s Day Pistachio Cupcakes

Ingredients:

  • 1 3/4 c. flour
  • 2/3 c. sugar
  • 1 small box instant pistachio pudding
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 1/4 c. milk
  • 1/2 c. vegetable oil
  • 1 tsp. vanilla
  • cream cheese frosting, homemade or store bought
  • green food coloring
  • Wilton gold sprinkles

Preheat oven to 375.

In a large mixing bowl, whisk flour, sugar, pudding mix, baking powder and salt. In another small bowl, beat eggs, milk, oil and vanilla. Add egg mixture to dry mixture and mix thoroughly.

Fill lined muffin pan cups approximately 3/4 full. Bake 20-22 minutes. Allow to cool in pan for about 10 minutes and then transfer to cooling rack.

Add green food coloring to frosting, frost cupcakes and then add sprinkles.
