Peach Donuts

Ingredients:

1 tsp. vinegar

1/3 c. whole milk

1 c. flour

6 tbsp. sugar

1 tsp. baking powder

1/8 tsp. nutmeg

1/8 tsp. cinnamon

1/2 tsp. salt

1 egg

1/2 tsp. vanilla

2 peaches, peeled and diced

For the glaze:

1/2 of a peach, peeled

1/4 tsp. vanilla

1 c. powdered sugar

In a small bowl, mix together vinegar and milk. Allow to sit for five minutes. Give this just a quick stir.

Preheat oven to 425 F. Grease your donut pan.

In a mixing bowl, whisk together flour, sugar, baking powder, nutmeg, cinnamon, and salt.

Add in the milk/vinegar mixture, egg, and vanilla. Mix well.

Add in the two diced peaches and mix until combined.

Spoon batter into prepared donut pan. Bake for 10-12 minutes. Use a toothpick to check for doneness.

When done, remove pan from oven and place on wire rack. Cool donuts in pan for eight minutes. Transfer donuts directly to wire rack and let cool completely.

For glaze:

Puree the 1/2 peach in a food processor.

In a shallow dish, combine peach puree and vanilla. Add the cup of powdered sugar gradually, just a little at a time, stirring after each addition, until completely combined.

Dip the cooled donuts in the glaze and return to the wire rack to cool. (Tip: Place a piece of wax or parchment paper under your wire racks prior to glazing your donuts.)
