Chicken Burrito Bowls

Ingredients:

  • 2 c. uncooked rice
  • 2 Tbsp. lime juice
  • cilantro, to taste
  • 2 c. shredded, cooked chicken
  • 1 Tbsp. oil
  • 1/4 tsp. cumin
  • 1/2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1 can (10.5 oz.) whole kernel corn
  • 1 can (10.5 oz) black beans
  • 1 head of romaine lettuce, chopped
  • 2 tomatoes, chopped
  • guacamole (homemade or store bought)
  • sour cream
  • salsa
  • cheese (cheddar, Mexican blend, pepper jack, whatever)

Prepare rice according to package directions. When it’s done, add the lime juice and cilantro, if desired.

Combine cumin, chili powder, salt, pepper, garlic powder, and paprika in a small bowl. Add to chicken and mix well.

Heat the oil in a frying pan. When hot, add seasoned chicken and saute for about 3-4 minutes. Just until hot.

In a bowl, add chicken, rice, and other toppings.
